Easy Microwave Caramel Corn (Safe for older kids!)

This recipe is so easy, and everyone loves it!  This recipe is great to make with older kids!

14 C Popcorn (about 1/3 C kernels in 3 Tbsp Oil)
1 C Brown Sugar
1 stick Margarine or butter
1/4 C Light Corn Syrup
1/2 Tsp Salt
1 Tsp Baking Soda

Place popped corn in clean brown bag.  In large (4 cup) glass measuring cup, combine brown sugar, butter, corn syrup, and salt.  Cook on high in microwave for 1 1/2 minutes or until it boils.  Stir.  Boil for 3 full minutes.  Stir in baking soda (this will cause it to bubble up, so have an adult do the stirring and be ready to pour into bag).  Pour over the corn in bag.  Fold over top of bag and shake well.  Microwave corn for 1 minute.  Shake.  Microwave 1 more minute.  Shake.  Microwave 30 seconds.  Shake.
Microwave 30 more seconds.  Shake.  Spread on waxed paper to cool.
