Jalapeno Time!



Last week, a fellow blogger requested recipes for what to do with Jalapenos.  Here is what I do with mine.

Zucchini Cornbread Casserole

Ingredients
4 cups shredded zucchini (about 2 zucchini)
1 onion, chopped (I used ½ an onion)
1 jalapeno, seeds removed, finely chopped
2 eggs, beaten
1 (8.5 ounce) package dry corn muffin mix
1/2 teaspoon salt
1/4 teaspoon ground black pepper
8 ounces Cheddar cheese, shredded

Directions
1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8X8 dish.
2. In a large bowl mix together the zucchini, onion, eggs, muffin mix, salt and pepper. Stir in half of the cheese. Spread this mixture into a greased 8x8 dish; top with remaining 4 ounces of cheese.
3. Bake in a preheated oven for 45 minutes.


Chicken Pot Pie
Follow the link to the Betty Crocker Pot Pie Recipe.  I've modified this for my use at home--changed ratio of crust/insides, making my own sauce, ect.  But one thing I always do is add 1/2 cup cheddar cheese to the Bisquick batter, and half a diced jalapeno (more if you want).  Then I bake.  I put some melted butter on the top when it is done baking and sprinkle with Garlic Salt.

Cheese Dip!
This tastes BETTER than the cheese dip served at my local Mexican Restaurant.  The jalapenos are delicious, but I've been known to toss in a habenero too.

Buzzard Eggs
This is a local favorite at a popular restaurant in town.  They take a chicken breast strip, pound it flat and wrap in around Monterrey Jack cheese and some sliced jalapenos, then wrap in it bacon and deep-fry it and serve it with ranch.  Here is a recipe from Table for 7.  I haven't perfected it yet, but I'm working on a recipe for bacon wrapped chicken breast that incorporated all of these elements.

Grilled Cheese Sandwiches

Cornbread
Hush puppies
Cheese Grits
Cheesy Potatoes
Loaded Baked Potatoes (or Twice Baked Potatoes)
Pickles
Hamburgers
Nacho Cheese
Homemade macaroni and cheese

Other ways to use Jalapenos (I've heard of these but never tried to make them myself and therefor do not have a recipe):
Cowboy Candy
Jalapeno poppers
Jalapeno jelly
Jalapeno Tequila
Jalapeno Popper dip
